Metropolitan plates, unhurried service

Executive chef Mara Ellison built the Vantor House menu around restraint: fewer dishes executed with precision rather than encyclopedic lists that fatigue the guest. Produce arrives from regional farms twice weekly; fish is purchased whole and broken down in-house; bread proofing begins at midnight so morning rolls carry actual crust.

The dining program respects the tower's residential character. Conversation stays at conversational volume. Lighting dims gradually after nine. Staff know when to appear and when to vanish — the hallmark of a house that treats mealtime as part of the stay, not a performance staged for strangers.

Ground Counter

An open kitchen on the lobby level where guests sit at a long concrete bar or small tables along the window wall. The menu changes weekly but always includes a vegetable-forward main, a whole roasted protein, and two desserts — one chocolate, one fruit. Counter seating suits solo travelers and couples who want to watch the line work without formality.

Meridian Room

Table service on the twelfth floor with views over the terrace district. A tasting menu runs five courses on weekends; weekdays offer à la carte dining with a focused wine list emphasizing small vineyards from coastal and high-desert regions. Jackets are not required; we ask only that phones remain silent and screens dim.

Reservations hold for fifteen minutes past the booked time. Parties of six or more may select a prefix menu with wine pairings arranged through guest relations. Private dining alcove available for eight guests maximum — popular for discreet business meals.

Upper Pantry

Exclusive to registered suite guests on floor thirty-nine. A self-service pantry with chilled salads, artisan cheeses, house-made granolas, and a selection of wines and spirits priced at cellar cost plus service. Staff restock between six and eight each evening; the space remains accessible until two in the morning for guests returning from theater or late walks through midtown.

The pantry is intentionally small — twelve seats at a communal table, two private nooks — so it never feels like a second restaurant competing with the rooms below. Think of it as an extension of your suite kitchen without the cleanup.

Practical notes

In-room dining is available twenty-four hours from a shortened menu — soups, sandwiches, and breakfast items. Dietary restrictions should be noted at reservation; the kitchen accommodates vegetarian, vegan, and common allergen requests with advance notice. Gratuity is included in Meridian Room checks; counter guests may add at discretion.
